Earlier Since Ancient times, we in India, used Clay pots to cook food. the clay pot makers were the very learned people in this way.they knew how beneficial it was to use it ,thought may be they won't be able to explain much of scientific reasons today but they were the best scientist who knew what is good.

you can also use Brass(pital) utensils which if you can recall were used in older times.I've seen those in our Grandfather's home.


Baagbhatta the earlier scientist of India who had done a deep research on food & kitchen.Said- The food which is cooked without the light of sun & air is not less than a poison.And Pressure cooker fulfills these 2 conditions.no Sunlight,no air in the food cooked.thus, the cooked food has lost all the nutrients & benefits it could have delivered otherwise to us.


                                    
In an test done by CSIR & other labs he saw that the Daal (pulses) cooked  in Andhra pradesh's jagannath puri temple where Cooking is done only in earthen pots had preserved all the nutrients & survived 3 days without the use of refrigerator.

On the other hand, pressure cooked daal (pulses) had even less than 1 % of nutrients of daal.

Reason:- In pressure cooker, daal bursts rather than cooked.
